  • marinate the peeled eggs for 8 hours, making sure they are completely submered (put a plate on top?)
  • cut the eggs in half lengthwise, scooping out the yolks; make the filling
  • sprinkle a bit of the shishimi togarashi in each egg white; add a few drops of the marinade; add the filling
  • garnish with shishimi togarashi and diced scallions
