fried garlic butter:

garlic, minced
rosemary
oregano
chili flakes
parsley, minced
put in small pot and heat for
1-2 min, until butter is melted
and spices are fragrant, then
allow to cool



  • make 3 c focaccia dough q.v.
  • proof
  • divide into 12 pieces
  • roll each piece into long cylinder, and tie into a slip knot
  • toss each knot in the garlic butter, and place on baking sheet leaving space so the knots will not touch while rising
  • drizzle each knot with any remaining garlic butter
