- put ribs in plastic bag, pour in half the sauce
(reserve the rest), massage to coat ribs, put in icebox for
a couple of days
- put wire rack in baking tray, half fill tray with water
- place ribs on rack
- roast 1 hr at 300 deg F w/o basting
- empty tray of water, raise temp to 450 deg F
- roast 20 min more, basting once w/ sauce
- serve, sprinkled with chopped scallions
