rub with 5 spice powder

  • put ribs in plastic bag, pour in half the sauce (reserve the rest), massage to coat ribs, put in icebox for a couple of days
  • put wire rack in baking tray, half fill tray with water
  • place ribs on rack
  • roast 1 hr at 300 deg F w/o basting
  • empty tray of water, raise temp to 450 deg F
  • roast 20 min more, basting once w/ sauce
  • serve, sprinkled with chopped scallions
