1 8	T oz	olive oil guanciale diced, 1/2 in cubes	put in large pot over med heat and render 'til crisp reserve
1	lb	spaghetti	put in boiling water and cook 'til al dente; drain reserving 1 c water
put the cup of water in with the rendered guanciale, bring to a boil, then add the pasta and toss to combine
1/2 1	c t	grated pecorino romano black pepper, ground	add, tossing to combine
serve, with additional grated pecorino romano
