bread crumbs
parmesan, grated
have in readiness



  • oil a 9 x 13 inch baking dish
  • spread half eggplant sauce on bottom
  • top with spaghetti, press down firmly
  • spread ricotta mix on top
  • spread remaining eggplant sauce on top
  • sprinkle with bread crumbs and parmesan
  • bake 30 min at 350 deg F
  • broil 5 min or so, 'til golden brown
  • let rest 15 min before serving
