  • cut in half lengthwise
  • cut diagonal slits crosswise in the flesh
  • brush with olive oil
  • roast 45 min at 375 deg F
regular eggplants (mod):
  • cut in slices crosswise, or in half crosswise and then in lengthwise slices -- 3/8 - 1/2 in thick
  • brush with olive oil
  • roast 30 min at 375 deg F
