parmisan, grated
tomato sauce
bread crumbs, toasted
dried basil, as req
cut in 3/8 in slices, then bake on
oiled sheet 12-15 min at 450 deg F,
till starting to brown on top
in suitable casserole, spread thin layer of tomato sauce on bottom
add layer of roasted eggplant over
spread thin layer of tomato sauce over
sprinkle layer of mozzarella over
sprinkle layer of parmisan over, then a bit of basil
repeat as required
sprinkle breadcrumbs over top layer
bake c. 20-30 min at 350, until cheese melts and top browned
