parmisan, grated
tomato sauce
bread crumbs, toasted
dried basil, as req
cut in 3/8 in slices, then bake on
oiled sheet 12-15 min at 450 deg F,
till starting to brown on top





  • in suitable casserole, spread thin layer of tomato sauce on bottom
  • add layer of roasted eggplant over
  • spread thin layer of tomato sauce over
  • sprinkle layer of mozzarella over
  • sprinkle layer of parmisan over, then a bit of basil
  • repeat as required
  • sprinkle breadcrumbs over top layer
  • bake c. 20-30 min at 350, until cheese melts and top browned
