lean round roast cider vinegar sugar pickling spices cayenne pepper to taste

marinate in plastic bag a few hours or overnight

add to cast iorn dutch oven over high heat

- brown the roast well on all sides
- turn the heat to low
- add the marinade

carrots, 2 in lengths onions, halved

- continue cooking for 1-2 hours, 'til quite tender
- remove the roast and vegetables to a serving board
- strain the liquid in the pan and thicken with 1-2 T cornstarch
dissolved in a quarter cup of water
- pour the gravy into a serving pitcher
- accompany with mashed potatoes, minced onion and the gravy
