lean round roast
cider vinegar
sugar
pickling spices
cayenne pepper to taste
marinate in plastic bag
a few hours or overnight

olive oil (or as req)

add to cast iorn dutch oven over
high heat
  • brown the roast well on all sides
  • turn the heat to low
  • add the marinade

carrots, 2 in lengths
onions, halved
add

  • continue cooking for 1-2 hours, 'til quite tender
  • remove the roast and vegetables to a serving board
  • strain the liquid in the pan and thicken with 1-2 T cornstarch dissolved in a quarter cup of water
  • pour the gravy into a serving pitcher
  • accompany with mashed potatoes, minced onion and the gravy
