1 1	ea T	eggplant, diced salt	sprinkle over diced eggplant and drain in colendar for 30 min; rinse, drain, reserve
1 3 3	med clv T	onion, sliced garlic, sliced olive oil	saute in skillet (or dutch oven) for 5 min or so, until onions translucent
10 -	oz T	criminis olive oil as req	saute in skillet until lightly browned
add eggplant to skillet and saute for 15 min or so
28 2 2	oz med T	diced tomatoes carrots, sliced across dried basil	add and cook for additional 45 min
