fruit mixture, peel/pulp separate:

citrus fruit

  • cut kumquats in half lengthwise and remove the pulp from the skins, reserving the pulp and seeds
  • cut lemons/oranges/grapefruit in quarters lengthwise and treat likewise
  • slice all peel thinly, or chop in food processor, or grind in food grinder (dealer's choice)

simmer for an hour or so, then
let stand overnight

  • pour water from reserved peel onto reserved pulp and stir
  • srain through cheesecloth, letting it drip overnight
fruit mixture, peel/pulp together:

  • cut seedless kumquats in half (if you can find them)
  • cut lemons in quarters lengthwise, slicing off the center pith, discarding it along with the seeds
  • cut seedless oranges in quarters or eighths, slicing off the center pith
  • slice crosswise thinly
