- cut kumquats in half lengthwise and remove the pulp from the
skins, reserving the pulp and seeds
- cut lemons/oranges/grapefruit in quarters lengthwise and
treat likewise
- slice all peel thinly, or chop in food processor, or
grind in food grinder (dealer's choice)

simmer for an hour or so, then let stand overnight

- pour water from reserved peel onto reserved pulp and stir
- srain through cheesecloth, letting it drip overnight

- cut lemons in quarters lengthwise, slicing off the center
pith, discarding it along with the seeds
- cut seedless oranges in quarters or eighths, slicing off
the center pith
- slice crosswise thinly
