  • dampen two paper towels, place 6 tortillas between, and microwave for about a minute, to make more flexible for rolling
  • take each tortilla, spread heaping tablespoon bean mix down middle, add one tablesponn shredded cheese, and roll up, brush w/ olive oil
  • fasten with toothpicks, place on baking sheet
  • bake 10 to 12 min at 350 degF
  • slice each several times at an angle
  • serve w/ salsa, sour cream, and guacamole on the side
