finely dice everything, combine






rolls:

rinse, pat dry, remove big vein

  • dip each rice paper into a bowl of water for five seconds, shake off excess and place on kitchen towel
  • stack several lettuce leaves horizontally on lower third of the round
  • top with carrot, scallion, red pepper matchsticks, two mint leaves, and two sprigs cilantro
  • fold bottom of the rice paper up over the veggies, fold in the sides and roll up
  • serve on platter along with the sauce
