defat, deskin, cut into bite size pieces
place in bowl for marinating

dry sherry
fresh minced ginger
brown sugar
add to chicken and marinate

cut in pieces, reserve

peanut oil, as req

green peas, frozen

  • add some peanut oil to a suitable skillet and brown the chicken in batches, reserve
  • lightly brown the onion pieces
  • add the chicken pieces back in as well as the frozen peas, mix well and place in bowl for steaming
  • place bowl in steamer and steam for 30 min or until the chicken is done
