dissolve salt and sugar in the water

turkey breast, 4-5 lb

immerse in brine and refrigerate
for 1 1/2 hrs
  • rinse turkey breast under cold water
  • place skin side up in roasting pan
  • rub skin with butter and grind pepper over
  • roast 30 min at 450 deg F, rotate pan 180 deg
  • roast at 350 deg F until internal temp reaches 165 deg F
  • remove breast to cutting board
