with cheese, then onion & jalapeno;
then more cheese; cover with second
tortilla

cheese should be bubbly, and both tortillas somewhat brown
place on board and cut into eighths, or sixths, depending on size of the tortillas

spread bottom tortilla with cream cheese
use sundried tomato and olive relish
use part parmesan or peccorino romano
