corn tortillas
grated cheddar
diced onion
diced jalapeno
place one tortilla on board; sprinkle
with cheese, then onion & jalapeno;
then more cheese; cover with second
tortilla

olive oil
as required
  • place on oiled griddle, cook on one side 'til starting to brown, then on the other
  • cheese should be bubbly, and both tortillas somewhat brown
  • place on board and cut into eighths, or sixths, depending on size of the tortillas
  • variations are endless
    • spread bottom tortilla with cream cheese
    • use sundried tomato and olive relish
    • use part parmesan or peccorino romano
