put in chilled bowl and beat c 45 s at med 'til foamy and beginning to thicken; beat 30 - 60 s on hi to soft peaks

- substitute 1/3 c sour cream for mascarpone
- substitute 1/4 c whole milk yoghurt for mascarpone
- substitute 1/2 t vanilla and 1 T dark rum for vanilla
- substitute 1/2 t vanilla and 1 T orange liqueur for vanilla
