sturdy fish, haddock
water to cover

bring to a boil, turn fire down
simmer 5-8 min, until cooked through
drain & reserve, fish and water

dice onion, and brown in butter

medium potatoes
(russets or yukon gold)

peel, dice, and cook in fish water
5-8 min, until done; don't overcook
drain,
  • deskin fish, check for bones, break up coarsely, 1/2 in to 1 in pieces
  • return potatos to pot, then the fish, add 1 cup fish stock
