mix, heat 'til sugar dissolves,
let cool

rinse the rice in a strainer
or colander under cold
running water until the water
runs clear. put rice and water
in saucepan, bring to a boil,
turn heat to low, and cook
'til done, c 20 min
  • stir dressing into the cooked rice
  • while mixture will appear very wet at first, keep stirring and rice will dry as it cools

mix and reserve

short grain rice
water
wash and put in covered pot
add and let soak 20 min
  • bring to boil, turn heat to low, simmer 10 min
  • turn off heat and let steam additional 10 min
  • remove rice to large bowl and toss the rice
  • sprinkle on the seasoned vinegar and continue tossing until all the grains are coated and shiny
  • fan the rice as it is being tossed
  • place in shallow serving bowl and cover with a damp cloth
  • never refrigerate sushi rice
