prepare by cutting peel in strips
cutting away some (most?) of the
pith, then cutting crosswise to dice

  • cook to soft ball stage, 230 F or so
  • 2020 it took about 20 min to get there
  • drain in sieve, turn out onto plates in single layer to dry
  • store in air-tight container
