fry sliced onions in butter until
onions really dark brown; sort of
caramelized, but not burned; reserve

melt in #8 frying pan (same one,
onions gone) over med high heat

beat together, and pour into the
frying pan
  • in the beginning, stir egg mix as it cooks
  • then mainly scrape the sides and edges of the pan
    • moving the cooked egg toward the center
  • turn the heat to med low as the omlett sets
    • should be comfortably set and brown on the bottom
  • distribute the browned onions over the omelett
  • fold the omelette in half; serves 2
