dried black beans
soak overnight, then drain; reserve

heat in heavy bottomed soup pot

celery, chopped
garlic, chopped
add and saute for 10 min or so

canned plum tomatoes
smoked turkey, chopped
lemon, juiced
ground cumin
ground coriander
add and bring to a boil; lower heat and
simmer for an hour or until beans are
done

add to taste


  • remove 2 c of soup and puree in blender; return to pot; simmer another 30 min

red onion, chopped
fresh coriander, chopped



  • serve in bowls; add a dollop of sour cream and a sprinkling of onions and coriander
  • italian parsley may be used if coriander not available
