german potato salad

1/4	lb	bacon	dice and render well; drain; reserve discard residual fat and save pan for next step
1/2 - 1	c ea	sugar in 1 cup measure cider vinegar to fill cup egg, beaten	mix and heat gently 'til mixture thickens
2	lb	potatoes	clean and boil with skins on; slice
2	ea	onions	peel and slice thinly
-		parsley, to taste	chop fine
mix potatos and onions with dressing, gently, while stil warm sprinkle with rendered bacon and parsley serve with browned bratwurst (weisswurst, kalbsbratwurst)
